Javier studied the Culinary Arts in San Diego. after graduation he worked in Hotels and restaurants in the area before traveling the world. In 1989 he opened his first restaurant. He has appeared in publications such as Food Arts, La Buena Mesa, Gourmet Magazine, Catadores, Food & Wine, GQ Mexico, the New York Times, Los Angeles Times, The New Yorker, the Washington Post, and various radio and television shows in Mexico and The US such as "No Reservations" with Anthony Bourdain, "Mexico, one plate at a time" with Rick Bayless and "Bizarre Foods" with Andrew Zimmerman. He's cooked for Arnold Schwarzenegger, Mexican Presidents Vicente Fox and Felipe Calderon Hinojosa, And participated in the "Chef Dance" part of the Sundance Film Festival.
