Joshua is executive chef of Ava Gene’s and Roman Candle Baking Co. in Portland. after stints at Lupa, Momofuku, Blue Hill, and Franny's, he spent two years working in coastal Maine, running Four Season Farm with Eliot Coleman. His belief that food should be simple and honest has found it’s natural home in the Pacific Northwest. Ava Gene's Featured in The New York Times, Bon Appetit fifth Best New Restaurant 2013, Portland Monthly's Restaurant of the Year in 2013.
