Before graduating with honors from the CIA, Lon was awarded the silver medal at The Culinary Olympics in Berlin. He developed his passion for Asian flavors at Jean-Georges in New York City and went on to open Jean-Georges Shanghai. Lon eventually returned to NYC at Buddakan, where he earned a coveted New York Times two-star review. In 2010, Lon relocated to Denver to open ChoLon, a James Beard finalist for Best New Restaurant in America. In 2012, he was nominated for Food & Wine’s Best New Chef.
